Chocolate Chip Banana Energy Balls

So I am obsessed with using up ripe bananas. And I don’t know about you all, but it happens all the time for me, where I buy several, have to wait until it it’s ripe enough to eat, then it passes that point of no return and bam…game over. But really it’s not game over because of all the options you have for recipes. This is just one of them and I have another video for chocolate chip banana cookies here:

Back to ripe bananas. Bananas have a natural sweetness to them, especially when they become ripe and soft. They make a great substitute to sweeteners in baked goods, like bread and add flavor to other things like overnight oats for example. Don’t let them go to waste because they get soft and have brown spots on them.

These energy balls or bites are so easy to make and require ingredients that you may already have on hand. Mix and match things and add what you like!

Grocery list:
(makes 20–25 balls)

1 and 1/2 cup rolled oats
1 banana, mashed
1 tbsp chia seeds
1/3 cup maple syrup or honey
1/4 cup peanut butter or other nut butter
1 tsp vanilla
1/2 tsp cinnamon
1/4 cup semi sweet mini chocolate chips

  1. In a large mixing bowl, combine all ingredients until fully incorporated and uniform. It will be sticky.

2. Cover the bowl with plastic wrap or lid and place in refrigerator for 3 to 4 hours. This will help the mixture absorb the flavors and firm up.

3. Once mixture is firm, take the bowl out of the refrigerator. Using a spoon or cookie scooper, roll out about 1 to 1.5 tablespoonfuls. Whatever size you prefer.

4. Place on a cookie sheet to dry and harden if they feel sticky or wet. If they don’t have that consistency then place straight into and air tight container.

5. Keep in refrigerator for up to 1 week or in the freezer for up to 3 months.
