Shrimp lo mein

Chinese food…who doesn’t love to order it? And when I order it, my dishes always include lo mein. I think it’s those cute paper cartons that they come in and the fact that you can just dig into it with your chopsticks. Mmm mmm. But why order it if you are having a small craving for it. This dish is so easy to put together and takes no time at all. Plus a bonus is it is also a nice way to clean out your fridge of those veggies you had lying around. It’s so versatile because if you can’t get the Asian egg noodle known as lo mein, you can substitute for spaghetti noodles. Also you can add whatever protein you want and mix up your veggies. Believe me when I say that this is one of those recipes that you can’t mess up.

Grocery list:
16 oz fresh lo mein noodles or spaghetti noodles
1/3 to 1/2 pound of peeled and deveined shrimp (size 40–50 or larger)
Any veggies of your choice — I used:
1 head of broccoli (2 cups)
1 large carrot julienne matchsticks
2 cups of shitake, beech or any kind of mushrooms
2 green scallions cut into 1 inch pieces
2 garlic cloves minced
1 tbsp of olive oil
1 tsp of sesame oil
2 tbsp of oyster sauce
3 tbsp of soy sauce
1/4 tsp of sugar
pinch of salt and pepper to taste
4 tbsp of water

  1. Heat olive oil in a sauté pan or wok. Once hot, add shrimp and cook for about 4 to 6 minutes flipping over halfway, until shrimp is opaque. Take out of pan and set aside.
  2. Heat up olive again and start adding your veggies. Add in order the vegetables that take the longest first and work backwards. Example carrots and broccoli take longer to cook. Stir up and add all veggies in while mixing up and making sure to not let it burn.
  3. Stir in the garlic and green onions and cook until fragrant. Then thoroughly combine the veggie mixture.
  4. To soften the veggies, add some water and cover with a lid. Cook until veggies are tender with little bite left to it. They will continue cooking with the noodles.
  5. Return the cooked shrimp to the vegetables.
  6. Add in the fresh noodles and begin to add following ingredients one at a time, mixing as you go; sesame oil, soy sauce, oyster sauce, sugar , pepper and salt.
  7. Do a quick taste test and add additional salt and pepper to taste. And done!
